COPA first opened its doors in November 2019—just months before the world came to a sudden halt during the COVID-19 pandemic. Despite the early challenges, we weathered the storm and quickly became a staple in St. Petersburg’s Edge District, thanks in large part to the unwavering support of our community and our hands-on, adaptive approach. Today, COPA is celebrated for its bold flavors, vibrant energy, and deep commitment to community.

VISIT OUR NEWEST ADDITION - “cafe copa”
In spring 2024, we reached a major milestone by expanding into our neighboring unit and doubling the size of our existing footprint. This growth gave rise to a new concept Café COPA - a sunlit café by day and a candle-lit cocktail lounge by night.
Mornings at COPA begin at our Café with coffee, breakfast, and lunch. Afternoons come alive with live Latin jazz, and evenings unfold after 5pm with full dinner service, late-night cocktails, and an elevated cultural experience.
We aim to blend the dynamic flavors of Latin America, the spice of the Caribbean, the rhythms of Africa, all with a modern touch. Fresh, locally sourced ingredients and bold, authentic recipes create a one-of-a-kind dining experience. Beyond the flavors-the atmosphere, the sounds, the art and the people will immerse you in a fusion of culture.
